  3. Blanching in boiling water for 3-5 minutes to preserve crispness, pale yellow color, and nutrients.
  4. Immediate canning (hot fill): Filling baby corn into cans, adding light brine or lightly sweetened water for flavor.
  5. Sealing cans tightly and retort sterilization at 115-121°C for 25-45 minutes to eliminate bacteria and ensure long shelf life (typically 2-3 years).
  6. Cooling, quality inspection (checking for leaks, pH, vacuum level), labeling, and cartoning.
