Vietnamese Canned Bamboo Shoots – Premium Quality for Global Export
Types of Bamboo Shoots
Vietnamese canned bamboo shoots primarily use high-quality fresh bamboo:
- Bamboo shoots (tre shoots): From natural or cultivated bamboo (Dendrocalamus asper, Bambusa blumeana…).
- Small bamboo shoots (trúc shoots): Small, crisp, low-fiber variety.
- Baby bamboo shoots: Tender, soft, low-fiber shoots, highly preferred in premium markets.
- Lightly fermented bamboo shoots: Some Asian markets prefer slightly fermented shoots before canning.
Production Process
- Harvesting fresh bamboo shoots during the season (typically May–October), selecting young, non-fibrous shoots 15–30 cm long.
- Peeling, removing tough parts, and thoroughly washing.
- Cutting into slices, chunks, or leaving whole (depending on type): slices 3–5 mm thick, chunks 3–5 cm, or small whole shoots.
- Blanching in boiling water for 5–10 minutes to remove natural bitterness and preserve crispness.
- Immediate canning (hot fill): Filling shoots into cans, adding light brine or lightly sweetened water for flavor.
- Sealing cans tightly and retort sterilization at 115–121°C for 30–50 minutes to eliminate bacteria and ensure long shelf life (typically 2–3 years).
- Cooling, quality inspection (checking for leaks, pH, vacuum level), labeling, and cartoning.
