Brief Production Process
- Selection and preparation of raw materials: Naturally ripened fresh papaya (red-fleshed or yellow-fleshed varieties from Vietnam), washed, peeled, seeds removed, sliced to 5-10mm thickness or cubed.
- Quick freezing: Frozen at -30°C to -40°C to form ice crystals.
- Sublimation drying: In a vacuum chamber at low temperature (-20°C to -30°C) for 24-48 hours, where ice sublimates directly into vapor.
- Inspection and packaging: Remove defects and vacuum pack.
The process ensures the structure is preserved, resulting in a crispy texture without the need for preservatives.
