  1. Brief IQF production process • Harvest at 75-85% ripeness (variety-dependent) • Wash → peel, de-seed → cut into dice, slices or halves • Dip in anti-oxidant solution (ascorbic/citric acid) • IQF freezing at -38°C to -40°C (core ≤ -18°C within <15 minutes) • Sorting, metal detection → packing
  2. Main varieties for international export • Booth 7 (034): deep yellow flesh, rich, creamy, strong aroma • Hass: dark skin, dense flesh, fat >22%, most preferred in EU/USA/Australia • Pinkerton, Reed, Fuerte (smaller volume) • Hass & 034 currently >90% of IQF export orders
  3. Common sizes • Dice: 10×10, 15×15, 20×20 mm • Slice: 5-8 mm thick • Half-cut (seed removed) • Whole peeled (less common)
