Production Process

1. Harvesting ripe cashew apples (February–May)
2. Separating nuts from the apple (manually or mechanically)
3. Sun-drying or mechanical drying (moisture reduced to 8-10%)
4. Steaming the hard shell → shelling (most labor-intensive and hazardous step)
5. Removing the thin inner skin (blanching)
6. Grading by size, optional roasting (raw, salted, honey-roasted, etc.)
7. Quality inspection & packaging
