Production Process
- Harvesting ripe coffee cherries (November–March, depending on region).
- Processing: Wet (washed) or dry (natural/sun-dried) methods:
- Robusta: Primarily dry-processed.
- Arabica: Mostly wet-processed to maintain clean flavor.
- Drying beans to 10-12% moisture.
- Hulling (removing parchment skin), grading by screen size and density.
- Roasting (if exporting roasted beans) or exporting as green beans.
- Quality inspection, grading (Grade 1, Grade 2, Specialty – SCAA 80+ points), and packaging.
