Galangal powder is a product processed from fresh galangal roots through cleaning, drying, and fine grinding, retaining its distinctive sharp spicy flavor (hotter and more aromatic than ginger) while being convenient for storage and use.

Origins of Vietnamese Galangal

Vietnamese galangal is renowned for its strong spiciness and unique aroma thanks to the tropical climate and soil:

  • Central provinces (Quang Nam, Quang Ngai, Binh Dinh, Phu Yen): Traditional growing areas with large roots, intense aroma, and high quality.
  • Mekong Delta (Tien Giang, Ben Tre, Vinh Long): High yield, suitable for industrial production.
  • Northern provinces (Ha Tinh, Nghe An, Thanh Hoa): Mountain galangal with rich flavor, commonly used in traditional cuisine.

Production Process

  1. Harvesting fresh galangal roots at optimal maturity.
  2. Cleaning, peeling (or keeping skin depending on type), slicing thinly.
  3. Drying at 50-60°C to preserve essential oils and reach 8-10% moisture.
  4. Grinding finely and sieving.
  5. Immediate packaging to prevent aroma loss and moisture.

Packaging

  • Standard: 25kg kraft bags lined with PE or 5-10kg aluminum bags (suitable for bulk export).
  • Customized: Stand-up pouches with branding, cartons, plastic jars, vacuum bags – tailored to customer requirements.
